Good morning and welcome back to another meal plan!
I had big plans last week to get organised, back into the swing of blogging, and then get back into the kitchen. The week rolled around and not a lot happened and then I managed to pick up a viral infection which has taken until now to shift! Now, usually, I would say that this week will be different and things will play out a little more as things calm down but I don’t think that is going to be the case. Life is just busy at the minute.
Recently I rejoined Slimming World, I am trying out the groups this time rather than the online version. At the minute the jury is out as to whether I prefer the group or the online one but we shall see. The plan is the same though, so I should be doing well and I was until this weekend when I just slipped into old habits. However, today is a new day and we are going just see how this week goes and make sure we are sticking to the plan, which I know how to do!
This week’s meal plan is going to be about ease and no stress. I have so much to remember, that the plan is just to focus on the week coming up, simple options are going to be the winner. There will be some family favourites and meals already in the freezer to boost the menu.
So, let’s get back and see what is cooking this week.
Our weekly meal plan – 16/05/22
Monday –
Spaghetti bolognese – I already have a portion of this in the freezer so it is just the case of warming through and adding some spaghetti.
Tuesday –
Chicken jambalaya – This is a new recipe for us to try from Slimming World. I am looking forward to seeing how this one comes out, as usually, their recipes are nice.
Wednesday –
Chilli Con Carne – One of the easiest dishes to make and bulk out, it is great for Slimming World too as you can throw loads of vegetables into it for speed food.
Thursday –
Fish and vegetables – I have some fish still in the freezer that I am going to use up this week and just keep it simple with vegetables.
Friday –
Takeaway- Yes, I still have a takeaway on Slimming World!
Saturday –
Chicken fajitas – For me, I am going to have mine in a bowl with some sweet potatoes but for everyone else, they can enjoy the wraps and sour cream!
Sunday –
Chicken tray bake – I am thinking chicken with some delicious Mediterranean vegetables. Something simple but delicious.
Although I love the dishes on here I do think that in the coming weeks I need to start looking for a few new recipes to try as a family as we are always sticking to the same ones. I know they could be classed as classics, however, after a while you get a little bored of having the same things over and over.
Where are your favourite recipes from? I’d love some suggestions on where to go and find some great family meals for us all to enjoy. Maybe some are using a little less meat and cheaper ingredients to help with the rising costs of food and living at the minute.
