Happy Monday all and welcome back to our meal plan posts.
It has been a while and life has been busy, so I took some much-needed time away just to get things organised and back on track. Since my last post, I have changed jobs, had the Easter break and a host of other things.
Even though I have not been sharing our meal plans in a post, I have still been writing them and sticking to them mostly over the last few weeks. It is always easier when I am off work though compared to work days when it comes to meal plans. With time, I don’t mind spending time in the kitchen cooking but I really struggle with cooking after a long day at work.
I have been trying to use up what we have and not let anything go to waste, which sometimes is easier said than done. We have noticed a reduction in our food waste, even if the cost of food is still going up. It is now about making the money go that little further with our shopping.
We return to work and school routine this week, so I am going to stick to mostly family favourites but ones that are quick and minimal fuss to get cooked.
Our weekly meal plan – 17/04/23
Monday –
Korean pork and rice – I love how quick this recipe is to prepare and cook. Served with simple rice and salad is the perfect way to eat this.
Tuesday –
Tuna pasta bake – On a Tuesday I have a later meeting after work, so it is something quick for when I get home to make sure we are all fed at a reasonable time.
Wednesday –
Chicken curry, rice and naan bread – Again, keeping it quick here and using a jar of sauce to make my life a little easier with the dinner tonight. This is a dish that everyone eats, so makes life a little easier.
Thursday –
Teriyaki salmon and salad – I have not cooked this before, so looking forward to trying it. Though I am not sure whether to serve rice or new potatoes with it, so I will see how I feel nearer the time.
Friday –
Chilli con Carne – Keeping this simple as we roll into the weekend, there is a portion of this in the freezer, so it just needs hearing up and
Saturday –
Roast – We have switched our roast nights to a Saturday, it just makes the Sunday more relaxing! This week we will have roast chicken with all the trimmings.
Sunday –
BBQ – The weather is looking good for the weekend, let’s hope it stays that way!
We are trying to make some adjustments to what we are eating too, it had become too much of a convenience to reach for the snack and the unhealthier dinner options. Now we are piling the plate with veggies or salad to make up the meal and hopefully, in the coming weeks, we will feel the benefits of this! I still find it mad that it is cheaper to eat processed food than fresh food. Putting more fruit and veg in the basket and taking out the treats has actually pushed the cost of our weekly shop up.
As the warmer weather comes in, I am hoping to add some nice salads and jacket potatoes to the menu. Not only are these super quick to make but save time in the hot kitchen when the weather warms up!
