Our weekly meal plan – 21/06/21

Here we are again, it is first thing on a Monday morning and another weekly meal plan rolling around.

Last week’s meal plan was a little hit and miss again. Life is busy and there is always an excuse as to why we have a lazy dinner or something not on the plan. This week though I am determined to get back on plan and get a little more organised.

As we crawl towards the end of the school year (4 weeks to go for us), we have gotten tired and lazy. The plan with this week’s meal plan is to make life a little easier where I can for us and prepare easy dinners this week. We really need to expand our meal choices, I just can’t be bothered at the minute to try them out if I am honest! It is the whole effort involved, without knowing if everyone is likely to be hungry at the end of it all.

I also need to get back on plan with Slimming World, all the hard work I put in has started to unravel so this week I am back on that too. Also alongside that, I have gone back to being dairy-free. I’m not 100% currently which I am dealing with separately, however, I have noticed the more dairy and yeast I have, the worse I feel. Hopefully, with a few tweaks, I’ll feel a little brighter and even more determined to stick to it.

Anyway, back to this week’s meal plan.

Our weekly meal plan – 21/06/21

Monday

Egg, beans and tomatoes – I love eating this, simply because it is quick to make and delicious.

Tuesday –

Chicken fajitas and sweet potatoes – For us, we will be skipping the wraps as they are not very diet-friendly. Replacing that with oven-baked sweet potato chunks.

Wednesday –

Pasta – Super simple but delicious. Not sure about the sauce yet but I will make something up as I go along depending on what I need to use up.

Thursday –

Keema curry – The last few times this has been on the menu, it has not made it to the oven. So, we are going to try again and have a delicious keema curry.

Friday –

Takeaway – Diet goes out of the window for one night.

Saturday –

Burger and chips – Lazy dinner but delicious. I will try and find us a Slimming World suitable option nearer the time.

Sunday –

Sunday roast – I have a whole chicken in the freezer, so planning something simple and delicious with that. The kids love a roast dinner, especially the Yorkshire puddings!

This week is not about fancy dinners or trying out many new dishes. It is simply a week for us to try and get back on track with our meal planning and our eating. Our laziness affects so much more than just our health as it impacts the budget too! With food waste thrown in it is just not a very good combination. I’m hoping to get back into the swing of it and not only lose the lbs but save some £s too.

Over the coming few weeks I need to build up a bit of a family favourites planner, so we have multiple meals that we can just pick from over a period of time. We started our food blog a while ago and it has gone quiet since. I’m hoping over the next few months we can build that backup and use it to create our own family cookbook in time, even if it is just a place for us to get a little inspiration at mealtimes.
