Welcome back to a slightly delayed weekly meal plan.
The last week has been tough going on us all as we lost our family dog Red on Tuesday, it has thrown the whole meal planning out of the window to be honest and that is fine. We have just gone with it each day depending on how we felt and if we were hungry. It has meant also that the blog has been quiet over the last week, whilst we get used to our new normal and I am struggling to get motivated to post. I know over time it will come back though, so for now, I am just focusing on making sure we are all ok.
This week is not really going to be much of an improvement on the meal plan front. We have a whole host of things going on and plan on meeting friends and family for the first time in over 16 months. It may mean the meal plan is a bit hit and miss, but that is fine with me!
So, here is what we have planned for this week;
Our weekly meal plan – 24/05/21
Monday –
Takeaway – I have an appointment tonight and am not due home till gone 6, so planning to grab something to eat on the way home.
Tuesday –
Chicken tikka sizzler – This is a new dish we are trying out. You are meant to have it with flatbreads, however, I am going to serve it with rice to make it a little healthier. The recipe is being made using a spice mix from Spice-N-Tice. Over the next few weeks I will be giving more of their spice mixes a try.
Wednesday –
Chilli Con Carne – I have this in the freezer, just need to cook up some fresh rice.
Thursday –
Chicken Rogan Josh – Using our own recipe, we are going to have a delicious curry. It feels like a while since we had a curry.
Friday –
Burgers & chips – We will be having healthy garlic and herb burgers and no doubt the kids will pick chicken burgers!
Saturday & Sunday –
Catching up with family and friends so who knows!
Sometimes in life, you have to learn it doesn’t always go to plan and that is what has happened last week. It isn’t ideal not sticking to it, especially when you are trying to save money but sometimes life just happens. Next week is half term here and I know we are not going to be sticking to a meal plan or Slimming World. However, sometimes life is just too short and you need to enjoy what is going on around you before it goes away.
Once we get back into a routine and sticking with our meal plans I am going to encourage the kids to get cooking with me. I hate having them in the kitchen as we have a small kitchen as it is, however, I think them taking part might encourage them to eat a little different and widen their choices. Not sure about you, but I get a little bored having the same meals on the meal plan every week. I want to try out a new dish or two every few weeks. You never know, we may even find a few family favourites trying it out this way.
