It’s time again for another weekly meal plan, the days and weeks are just merging into 1 and before we know it I am planning the next week’s meals.
I made a bit of a mess with the shopping this week and only realised at 6 pm on Friday that I hadn’t booked my shopping slot for the next day! Thankfully I was able to book a slot for the following evening but that just threw the whole weekend out for me as I am so used to the shopping arriving in the morning. It wasn’t too bad though as I managed to get everything we had ordered for the next week, I just was not very organised with the meals.
Life is hectic at the minute and I am trying to balance so many things in our life at the minute that I don’t know whether we are coming or going. So this week I am planning to go for quick and easy meals to get through to the weekend and then hopefully things will start to fall into place a bit more. I don’t know how I can be so organised at times and then the next week really disorganised! At least this weekend I will have the long weekend to get myself organised for the following week!
Let’s jump into this week’s meal plan.
Our weekly meal plan – 25/04/22
Monday –
Freezer food – It will be a late one for me at work, Monday always is. This means we will go with the easy options from the freezer to make life a little easier.
Tuesday –
Chicken enchiladas – I can’t remember the last time I tried these, they were not a huge hit when we last tried them! But I am trying to bring a few new dishes onto our liked list for dinners.
Wednesday –
Spaghetti bolognese – There is one batch of this in the freezer from last week, so it is an easy meal tonight with just needing to cook up some pasta.
Thursday –
Fish and chips – Another freezer winner today, using up the last of the battered fish portions we have to create a quick dinner.
Friday –
Takeaway – End of the week treat which is very much needed.
Saturday –
Chicken stir fry – I fancy cooking something a little different this weekend and plan to get some fresh veg in to create our own stir fry. I’m not sure what sauce we will have yet but I will look for some inspiration nearer to the time.
Sunday –
Toad in the hole – Going for something a little different today with a toad in the hole. Especially as Yorkshire pudding is always a winner in this household.
Next week I am hoping that I will be a little more organised compared to this week. With the food costs rising, now is not the best time to not be very organised with the meals we are going to be having. I do need to take time to sit down and look at what meals we eat as a family and the costs so we can have a mix throughout the week. But this would need me to actually get myself organised with our dinner dishes.
