It is time for our last meal plan for June, where has the time gone this month?!
I feel as though we are on the last stretch of the summer term though now that July is just around the corner. Time is just flying by this term and I am very ready for the summer holidays already, the break is very much needed by us all. We have no plans really other than to finish the work on the garden, are you fortunate enough to be planning a trip away?
For now, though, we have 4 more weeks of meals after work and I plan to make it as easy and stress-free as I can, all whilst sticking to Slimming World where I can. I have not been 100% on Slimming World recently and I really need to make sure I am staying on track as I want to get to target by the summer. The journey on Slimming World is not about being slim, for me it is about being more comfortable in my skin after putting on a few too many pounds over the last few years.
The plan for this week is to make sure I get organised going forward with our dinner plans but also lunch too as I have been stuck eating the same meals over and over recently for lunch and I would like to have a bit more of a variety. I never really get time to take a proper lunch break, so whatever meals I come up with a need to be ones that I can eat on the go and enjoy.
Anyway, let’s get back to the most important thing this week, our meal plan for dinners!
Our weekly meal plan – 27/06/22
Monday –
Tuna pasta bake – One of the kid’s favourite meals so starting the week off with their favourites to make sure they enjoy at least one meal I cook!
Tuesday –
Fish and vegetables – Planning on stacking my plate with vegetables and eating healthy tonight. It is so simple to cook too which I love.
Wednesday –
Jacket potatoes – Just a quick meal after Slimming World. Likely to be with beans and cheese as it is just so quick and simple.
Thursday –
Chicken curry – Again, using up the JD Seasoning. I usually make my own sauce, so I am looking forward to seeing how this one tastes.
Friday –
Freezer food – I think I will start calling this Freezer Food Friday! It is just a way to use up the odds and sods in the freezer really.
Saturday –
Takeaway – We are catching up with friends so looking forward to a nice takeaway and drink!
Sunday –
Beef stew – I am going to look for a recipe for a summer stew using beef as I picked up some reduced stewing beef over the week.
With the cost of food rising so much I am just trying to make sure that I make the most of the ingredients that we have floating around in the house. There is no need to buy anything else whilst we are fortunate enough to have food. Though we may have to be a little creative as to what we have, there is plenty to get by with and that is what I intend to do! Have you noticed an increase in your food costs? I’d love to hear your family’s favourite budget meals.
