Here we are, our last meal plan of the summer holidays! The kids are not back at school until next Monday, however, it feels as though this month has flown by.
With work fast approaching, I am trying to have an easy week whilst I get on with some blog work in anticipation of the downtime that will most likely come as I return to work. I most definitely do not have the work/home life balance right at the minute so need to really work on that in the coming months.
Over the holidays I have been working on the food blog with some new recipes and overhauling the design and I love it. I find it very therapeutic to work on the food blog as it is something that I am passionate about (I love food!). Long-term plans, I’d love to work on it full time but for now, it is just a hobby. If you have not checked it out yet, you can see it over here. There are lots of recipes coming in the next few weeks as I have been very busy working on the dishes.
This week’s meal plan is looking good, I have tried to add lots of variety in there. One thing I have noticed though is how I don’t do the same for my breakfast or lunches, I always tend to stick to the same choices for those, which gets a little repetitive. I am always on the lookout for inspiration and this is a great post of 30 breakfast ideas to get you started. The banana and Greek yoghurt loaf looks delicious!

Our weekly meal plan – 28/08/23
Monday –
Tuna pasta bake – Simple and popular, it just makes dinner a little easier when everyone eats what is being cooked,
Tuesday –
Chipotle pulled chicken with rice and salad – This dish is one from a subscription box that we had in the past, I kept the recipe so I am just going to recreate the dish at home.
Wednesday –
Hot dogs and curly fries – Always a winner in this house and one that is quick and simple to make,
Thursday –
Lamb biriyani – Another recipe being recreated from one we have had in the past. It is a quick cook recipe and one that should be done within 30 minutes, making it the perfect midweek meal.
Friday –
Takeaway – A Friday night treat whilst we are enjoying the footie. Not sure what we will have but something that I can enjoy with my feet up after being back at work.
Saturday –
Tacos – Again this is another crowd-pleaser, With a combination of tacos and fillings, this one always goes down well with the kids as they can create their own tacos.
Sunday –
Slow cooker sausage casserole – I have no idea what is going on in this yet, It is going to be a trial and error one I think until we find that family favourite.
The last few weeks have been on plan pretty much and the days where we have not been on plan, we have enjoyed things that we already have in the freezer. With the back to work and school almost upon us, I am trying to use up the things we have in the cupboards. It has got to the point where I have odd packets and mixes that have not been used up, so before they go to waste, I want to ensure they are used up.
We are also moving into the Autumn season, which allows us to enjoy things such as pies, stews, casseroles and all those hearty dishes that we love. It is my favourite time of the year and I can’t wait to get started with some of my favourite dishes.
