Our weekly meal plan – 31/05/21

Good morning and welcome back to another meal plan and like that May is gone already. Honestly, I don’t feel like I am getting anywhere lately as the days and weeks are just merging into one. I don’t want to scare anyone but before we know it the summer holidays are going to be here!

I haven’t even thought about the summer holidays yet but I have plans I want to be cracking through and I better get myself organised for that.

Back to the meal plan, we have been so off-plan it is silly. One thing after another last week meant we ended up being all over the place when it came to meal plans. This is not ideal on so many fronts, budget and healthy eating are the two that get the biggest hit when this happens. I also find that when I have been lazy like I have been for the last week, I struggle to get going again. We are on half term this week so plan to take it easy this week and then head back into it when we go back to school next week.

So, let’s see what we have planned for our last weekly meal plan for May.

Our weekly meal plan – 31/05/21

Monday

Chicken fajitas – Super simple but so delicious. Ethan is not a fan of these so he will have something else. Depending on whether I am being healthy, these will either be with wraps or sweet potato chunks.

Tuesday –

Spaghetti bolognaise – Again another easy meal as we have a portion of this in the freezer ready to go. Whenever I make bolognaise, it is always packed out with mushrooms and tomatoes, not only because they are delicious but because it goes further and allows me to freeze some portions.

Wednesday –

Pizza – Easy freezer meal for us, the kids will be happy.

Thursday –

Chicken pasta – I have been playing around with a chicken pasta recipe using cheese and I will be sharing it in the next few weeks. This meal is Slimming World friendly and is syn free if you use your Hex A, perfect for those trying to be healthy.

Friday –

Takeaway – Sticking to the takeaway rule still, plus it is the one night I look forward to as I don’t need to get myself organised and in the kitchen!

Saturday –

Roast – As it is back to school day on Monday, I thought I’d switch it up and have the roast today so I can have a lazy Sunday!

Sunday –

Burgers and chips – We didn’t have our burgers last week so going to have them this week. The kids will no doubt have chicken burgers but I’ll see what we have before I decide.

Our weekly meal plan - 31st May 2021

It is an easy week of meals for us this week with the half term here. However, I do need to get back into better habits. I have found the last month a real struggle with so much going on and that has allowed bad habits to creep back in and the weekly meal plans becoming a waste. This is not ideal, but it is the reality of life.

With the kids going on an amazing school trip next year though, all money that we have needs to be watched so we can pay for that. I am not sure about anyone else but our food budget is the bit that leaks money every month. It doesn’t take much effort to blow the budget when takeaways and lazy cooking come in and I need to stop this. So I will be looking for meal ideas and inspiration in the coming weeks to get us back on track.
