Good evening and welcome back to a slightly later-than-usual meal plan!
I had every intention of getting back on track last week with the meal plan and blogs and to be honest, I spent the whole week playing catch-up on life admin or just relaxing and both were very much needed. It did however mean that I didn’t try out some of the meals that we had planned and we moved a few things around to enjoy the break, including having a delicious BBQ! All that hard work on the garden makeover has become worth it though as we are now able to get out there and enjoy it. There are still bits to do though and it is not completely finished but this summer we will be able to make full use of it.
Anyway, let’s get back to food.
Slimming World has heavily influenced this week’s meal plan as I have gone back onto their online plan in a bit to get healthier and break some bad habits. I find myself easily tempted by the convenience food and fast food on offer, it is usually cheaper than cooking from scratch and also quicker. This is not an excuse though and I do need to break some bad habits to get myself back on track. I find the Slimming World method works and is one I can maintain.
Most of the meals we like can be adapted to become Slimming World friendly too, so there is not much
Our weekly meal plan – 05/06/23
Monday –
Pork chops, new potatoes and beans – It has been a while since I cooked pork chops and I am looking forward to this.
Tuesday –
Jacket potatoes, tuna and salad – I have popped this with tuna but I may change it when it comes around to dinner, depending on what I fancy to eat by then. It is to be served with a small salad, using lettuce from the garden.
Wednesday –
Honey & mustard salmon with rice – This is a recipe straight from Slimming World and one that I am hopeful is tasty. It is not something I have tried before, so it will be interesting to see how it turns out.
Thursday –
Penne arrabbiata – One dish to pack full of veggies! I love this dish and I am hopeful that there will be some leftovers for my lunch the next day.
Friday –
Chicken Rogan – We are going to be using our recipe for this but switching out the beef for chicken. The kids love this curry and it is so easy to make too, I won’t be popping it in the slow cooker but it is tasty when it is cooked in there too.
Saturday –
Peri peri chicken kebabs – I love making these now that I have discovered how easy they are to make. Served with a pitta bread and chips for everyone else and I will have mine without the pitta and with rice.
Sunday –
Steak and chips – Homemade chips with delicious steak and likely to be served with mushrooms and tomatoes.
This week is all about good food and switching to healthier options for me. It is not going to be a quick change in mindset but I am hoping once I feel a bit better from the changes, it will spur me on to keep going.
I need to start looking at a few meal plan alternatives going forward, cutting down on the meat. Not because you can not eat it on the diet but because it is so expensive these days!
