Our weekly meal plan – 17/05/21

Good morning and welcome back to this weeks meal plan.

Now usually, I would start by sharing how we got on last week. All I can really say about last weeks meal plan was it was a disaster. The only meal we ate on the plan was the roast, the rest of the week was food we shouldn’t have been eating! Rather than dwell on a bad week though, we are back on it and planning on having a better week when it comes to our meal plan. Some of these meals may seem familiar, they are. I decided rather than writing a whole new meal plan, we would use up some of the meal ideas from last week.

As a family, we are not always eating the same meals. In the coming weeks, I want to be working on getting us all eating the same, or at least very similar meals. It is hard as everyone’s tastes are different but there is a middle ground somewhere. I just need to find it!

Here is what we have cooking on this weeks meal plan:

Our weekly meal plan – 17/05/21

Monday

Creamy chicken pasta – This is one of my own design dishes that I first had when I started Slimming World. It is made with leftover chicken, spinach, tomatoes and Laughing Cow light. There is a few other ingredients but that is the base of it. I will share the recipe once I remember to take pictures!

Tuesday –

Spaghetti bolognaise – Time to use up a meal I have already batch cooked. Yummy!

Wednesday –

Poached eggs, ham & beans – I can’t wait to have this. At the weekend I had poached eggs on whole meal rolls with ham and it was delicious.

Thursday –

Chicken tikka sizzler – This is a new dish we are trying out. You are meant to have it with flatbreads, however, I am going to serve it with rice to make it a little healthier. The recipe is being made using a spice mix from Spice-N-Tice. If you would like to give them a go, this link will get you 20% off.

Friday –

Takeaway – Friday nights are family time, we still enjoy a takeaway and a movie.

Saturday –

Chicken and rice – Super simple but delicious. With this meal, it means everyone can have whatever takes their fancy with the chicken which is always a winner.

Sunday –

Roast or stew – This is all dependant on what we pick up with the shopping this week.

Our weekly meal plan - 17th June 2021

I don’t know about anyone else, but I find it hard to get back onto a meal plan. The last week was pretty stressful and it was clear to see as our first instinct was to reach for the takeaways and junk food. For us, this is a bad habit creeping back in after 6 weeks of healthy eating on Slimming World. It is not ideal however, we can’t go back and undo what has been done. Instead, this week we just need to make sure we are back on the diet and sticking to it throughout the week.

I’m hoping that this week will be a good week in terms of sticking to it and next week we will be able to move on with a few new dishes. The half-term break is just around the corner, with that I am hoping the get both kids in the kitchen giving me a hand with the cooking.
