If you are looking for an easy and quick midweek meal that the whole family will love, fajitas are the way to go. There is no need for any fancy packet mixes either as these easy beef fajitas will show you
Ingredients
- 400g beef steak sliced into thin strips - I used rump steak as that is what i had in but other types would work too
- 2 peppers sliced
- 1 onion sliced
- 4 wraps
- Grated cheese
- Sour cream & salsa
- 2tbs vegetable oil
Spice mix
- 3tsp hot chilli powder
- 2tsp ground cumin
- 2tsp paprika
- 1tsp garlic powder
- 1tsp onion powder
- 1tsp cayanne pepper
Instructions
- Add the spice mix, beef and oil into a bowl and mix well
- Leave this to marinade whilst you are heating up a wok or frying pan
- Once the pan is hot add your beef and cook for a few minutes
- Add your peppers and onion and let it cook down for 5 - 7 minutes until your vegetables are soft
- Serve in warmed wraps topped with salsa, sour cream and cheese
- Enjoy!
Pretty much all of the spices used in our fajita mix are used at some point in our other recipes such as our beef Rogan or our popular slow cooker pulled pork. So the little investment at the beginning can create so many more meals in the long run. I also only use the supermarket own brand spices rather than branded as I have never been able to tell the difference between the two, so why pay more?
These beef fajitas are great as they are but they are also extremely versitile. For example, if you have 3 peppers to use up as they are going past their best, just throw them in. It is the same for the meat too, if you don’t have beef you can replace this with other meats like chicken or turkey. It still tastes just as good I promise.
