Good morning and welcome back to another meal plan.
We are all back at work and school today and November is here already, in a blink of an eye it is going to be Christmas and we are not ready for that! Over the first few weeks, we have been trying out Hello Fresh for the last few weeks and have really enjoyed having them. They have opened up the options for meals that we may have never tried and that has been great however it has now gone up to full price which is a little out of our price range in the run-up to Christmas.
I am going to continue to use some of those recipes in the meal planning coming up and also use some of the new recipes from their website which sound delicious.
For now, though, the focus is on this week. Knowing that this week is likely to be really busy, I have planned a week of easy meals to get through to the weekend. Ones that are family favourites or just quick to cook to save me a little stress! The whole reason I reach for the takeaways is ease, some days I just want to take it easy and not think about cooking. It is not even for the taste as I know some dishes taste better when cooked at home.
Anyway, let’s get on with this weeks meal plan.
Our weekly meal plan – 01/11/21
Monday –
Chicken curry – I am planning on popping this in the slow cooker before work, then all I need to do when I get home is cook some rice up. Using our Rogan recipe is perfect for this as it creates a lovely sauce with minimal effort.
Tuesday –
Chilli Con Carne – We may have this as burritos or it may just be as it is. I have not decided also whether I plan to stick this in the slow cooker, but either way, it will be delicious and it is a great dish to bulk out for future meals.
Wednesday –
Peri-peri chicken wraps – This one is so simple, cooking it in our George Foreman grill gives us perfectly juicy chicken that is cooked to perfection. Then we can all add our favourite Peri-Peri sauce to complete the dish.
Thursday –
Chermoula spiced lamb and rice – One of the recipes from a previous Hello Fresh box. It tastes almost like lamb kofta’s and it is delicious.
Friday –
Fish and chips – Using up some of the variety of fish in our freezer!
Saturday –
Tuna pasta bake – One of the kid’s favourites and a dish that is super simple to cook.
Sunday –
BBQ Pulled pork – Cooked in the slow cooker. I am sure the kids will have theirs with freshly baked rolls and I am planning to make some sweet potato wedges for something a little different.
I am really looking forward to this weeks dinners, there is nothing in there that takes ages to make and there should be no excuses to be heading for the takeaway menu. With Christmas coming up I want to make sure we are saving as much money as possible where we can and this may mean that we need to have a few days where we are eating up what we have in our cupboards! Over time we have slowly been gathering items again that we may not always plan to eat so I will be looking to plan some meals around those.
