Our weekly meal plan – 07/06/21

Good evening and welcome back to a slightly later than planned meal plan and our first meal plan of June!

We had half term last week and I took a well overdue week off, which means this week I am running around a little manic and still trying to catch up on things! It was also back into school today and the first day back is always chaos at work as we get back into the swing of things and catch up on what has been missed.

This week’s meal plan is going to be simple and stress-free, I can not be bothered to be faffing around after work this week. There is so much going on here over the next few weeks that I plan on just sticking to the family favourites we know and have minimal fuss in the evenings.

Here is what we have planned this week.

Monday

Takeaway – It was the first day at school after a week off and I was knackered. Not Slimming World friendly but I didn’t care!

Tuesday –

Chicken fajitas – As we are back on Slimming World, I might have these with rice instead of wraps and make a fajita bowl dinner. I usually have them with sweet potatoes but I was too disorganised to sort that out this week!

Wednesday –

Jacket potatoes and beans – Need to do a fresh fruit run to the supermarket tonight so planning something simple when we get home. I usually cook the potatoes in the oven, however, we are likely to be short on time today so it is going to be done in the microwave.

Thursday –

Chilli con Carne – Packing in the vegetables for this and bulking it out. A great way to eat lots of speed food and make it go further as I can usually freeze 2 extra nights meals from this.

Friday –

Takeaway – Sticking to the takeaway rule still, plus it is the one night I look forward to as I don’t need to get myself organised and in the kitchen!

Saturday –

Burgers and chips – Easy dinner for the weekend and one I know the kids will love. They will have chicken burgers and I will just check out what recipes there are for Slimming World burgers.

Sunday –

Roast chicken salad – It is going to be warm so I think I’ll do a salad today. The kids love this as they call it a picky dinner, though for them I may do some freshly baked rolls that they can make themselves a chicken sub if that is what they fancy.

There is nothing fancy or inspiring about our meal plan, this is just a meal plan based on the food we will eat and that I know is quick to make. It is all about reverting to what we know best when time is not on our side and making life easier.

Yes, I would love to get my fussy children eating more. However, just eating freshly cooked food this week at a reasonable time is all I plan to achieve! Be kind to yourself if you are meal planning, it is not all about elaborate meals or things you’ve never tried. Some food is called comfort food for a reason, it is to comfort you when things get a little tough!
