Our weekly meal plan – 19th June 2023

Here we are again with another weekly meal plan. This time

Last week’s meal plan went a little off plan as I ended up with a visit from Ofsted at work, and then it was Ethan’s birthday and report card time for Kayleigh on Friday. So, we are just going to scrap last week and start again!

It is a combination of using up some bits that we already have made in the freezer and using up what is in the fridge and cupboard. The garlic and herb chicken we had last week was delicious and it will be on the menu again soon. We are also going to try a few new dishes this week to see how they go down, if they are not popular, I will keep trying again next week.

It has been too hot to cook this week too, so I have tried to keep the meals as simple as I could to keep the heat as low in there as I could. The weather is cooking down a little now and although I would like a nice Summer, I’d rather not be a hot puddle of sweat! I suspect as the warmer weather sticks around, we will be moving to more salads and even simpler options.

Anyway, let’s get back to what we have cooking this week.

Our weekly meal plan – 19/06/23

Monday –

Tuna pasta bake – This is the kid’s favourite and it has been a while since we had it on the menu. It is also a quick meal to make after a busy day at work.

Tuesday –

Jacket potatoes and salad – It feels as though this is becoming the new “Tuesday” meal, with a busy day at work till late, it makes a great meal with minimal effort when I get in. We will choose the topping on the day to make it a bit easier.

Wednesday –

Tacos – We never had these last week, so they are back on the menu. It will be a combination of soft tacos and crunchy tacos, so there is something for everyone.

Thursday –

Freezer food – There is a combination of things in the freezer that need to be used up, I will see nearer the time what we fancy.

Friday –

Spaghetti Bolognese – Another meal already in the freezer, so this will free up some space.

Saturday –

Pork Koftas on Greek Flatbreads – This is a new dish for us but I am hoping it will be delicious. I will be making homemade tzatziki and salad to go alongside the koftas.

Sunday –

Summer sausage traybake – I have no idea how this will go down with the family but hoping this is something tasty and a little different.

This menu should use up the majority of the bits in our freezer, which will allow me the chance to start afresh with the menus going forward. Going forward I am going to start just purchasing those bits we need for the week, too many times I get sucked in on the deals when realistically we don’t need those bits that week. Not helping the budget or the food waste shopping that way. However, sometimes it is easier said than done as things such as mince and chicken, we always use so taking advantage of the offers makes sense.
