Welcome back to our latest meal plan, it has been a while since I wrote one up!
Life always gets hectic towards the end of a term and unfortunately, the blog tends to take the hit when I have to let something drop. We are off work now for a week, so I plan to get right back to it and get myself a little more organised. I say this every time and I am sure this time will be like no other, it is highly likely that I will not be organised by the time I go back!
Over the last week and a bit, we have eaten so much food, after celebrating at a family wedding, we then went straight to Kayleigh’s birthday which she wanted to attend an all-you-can-eat buffet!
This week I am going to just stick to basics and use up some of the batched-cooked meals in the freezer. It is that time again also to start looking at what we have left in the freezer and start planning to use it in the coming weeks. I am also hoping we will be able to do a little baking this week whilst we have some time and this will give us a few snacks for the week too, teenagers eat far too much to keep buying things.
Anyway, let’s get on with what we have cooking this week.
Our weekly meal plan – 24/10/22
Monday –
Tacos – I haven’t made these in a while so I know they will go down well when it comes to dinner. We simply dish it up on the table and let everyone help themselves to create their own tacos.
Tuesday –
Mushroom and asparagus risotto – Such a simple yet delicious dinner. I tend to only make this when asparagus is on offer though as it can be rather expensive!
Wednesday –
Tuna pasta bake – One for the kids.
Thursday –
Pizza and garlic bread – This is coming from the freezer as I have both already in there. It is a great quick meal to make too so looking forward to a night off.
Friday –
Spaghetti bolognese – I am using up one of the portions in the freezer for this. This is always my favourite go-to meal when it comes to bulk cooking as you can add so many things to it that are cheap and it freezes really well too.
Saturday –
Freezer food – We will be using up the odds and sods in the freezer, for example, burgers, chicken bites etc.
Sunday –
Roast – It is time for a delicious roast with all the trimmings!
I am looking forward to being able to spend a little more time in the kitchen this week. Cooking after work is not my favourite thing as you always feel as though you are in a rush. There is not really much time in the evenings after work and you just want to cook something and enjoy putting your feet up for a bit. This week though we are able to have a little bit longer and can finally get ourselves organised!
We are also hoping this week that we will be able to work through what we have and get some meals planned from our store cupboard staples for the next few weeks too, hopefully saving those pounds on the weekly shop!
