Here we are again, back with another meal plan in what feels like 5 minutes since I wrote the last one.
To be honest, the weeks are blurring into 1 now and I am not really on the meal planning bandwagon at the minute, I’m far too disorganised at the minute. Next week is another week though and we just need to get through this week!
We are still cracking on with the garden at the minute and I am hopeful that by the end of the summer holidays we will have a patch for us to grow our own vegetables and fruit which will be amazing and hopefully all being well, will help reduce some of the food costs which are rising at a silly rate now. You can really notice the pinch when it comes to the cost of a weekly shop, with most items slowly increasing. Although individually the cost increase might not be much, every little bit soon starts to add up!
Our meal planning recently has been a bit of a mismatch of meals and that will be continuing this week, I am in the middle of trying to use up the bits and pieces in the freezer. Does anyone else’s household end up with 1 spare pie and a handful of chips etc lying around? We will need to have a night shortly that uses up the last bits.
Anyway, let’s get back to what we have cooking this week.
Our weekly meal plan – 04/07/22
Monday –
Korean pork and rice – This is one of my favourite dishes at the minute from Slimming World and it is so simple and overall pretty cheap to make. I serve ours with rice, cucumber, spring onions and sesame seeds, yummy!
Tuesday –
Chilli Con Carne – I am just going to use up one of the portions in the freezer for tonight’s dinner. This is for 2 reasons, first one is we are planning on getting in the garden to do some digging and also I need to start clearing down the odd bits in the freezer.
Wednesday –
Tuna pasta bake – A crowd pleaser and something quick to get through midweek.
Thursday –
Keema curry – Simple to make but full of flavour.
Friday –
Takeaway – It is the weekend and after another long week it will be nice to take a break!
Saturday –
Beef stir fry – I will come up with a sauce of some sort nearer the time but will most definitely pack it out with veggies and noodles,
Sunday –
BBQ – The weather is on our side, so I think a delicious BBQ to finish the weekend will work out just perfectly!
Thankfully this week was mostly about buying bits to use alongside some of the things we already had, so that has helped keep the cost down. Next week I am planning to put a few more pasta recipes on the planner, simply as they are cheaper options when it comes to our meal plan. I do need to sit down when things settle down and work out just what meals we should be rotating between, getting a good mix of budget and firm favourites that we all enjoy. I am also thinking of trying to create our own fakeaway menu that we can rotate between for the kids to pick from every week.
