It is time for another weekly meal plan as we move into the middle of the month again!
Last week’s meal plan went pretty much to plan, we did move things around a little but mostly we stuck to it. The chicken hotpot was delicious, other than I overcooked the potatoes which meant it ended up with more of a mash-style topping rather than the lovely sliced potatoes it should have had. Next time I think I would just add pastry to the top for a bit of texture.
This week we are giving just one new dish a go and the others are things that we have had in the past at some point (apart from the pasta bake that happens every week!). I just get stuck in a rut of having the same dishes week in and out I am trying to rotate things around a little.
I have also signed back up to Slimming World online, after doing the group for a while last year, I have decided that I need to get back to healthier options and just to keep me on track I have signed up so I can track it in the app and see where bad habits are creeping in. It won’t be a quick fix as I have too many bad habits when it comes to food, including snacking on the wrong things, portion sizes and takeaways but slow and steady is the best way to change bad habits! I will let you know how it goes.

Our weekly meal plan – 09/01/23
Monday –
Steak and homemade chips served with grilled tomatoes and mushrooms – We have some steak in the freezer from our Christmas hamper so I am going to cook these tonight with some delicious sides.
Tuesday –
Tuna pasta bake – No point discussing this one, it is on the menu every week!
Wednesday –
Pea and Mint Risotto – I am using up some of the spice mixes I have from JD seasoning, I am looking forward to seeing how this one comes out.
Thursday –
Spaghetti and meatballs – Hopefully I can convince one of the kids to help me make these and then it may encourage them to eat them!
Friday –
Fish, new potatoes and vegetables – I have some fish still in the freezer that has not been eaten so going to keep it simple and delicious.
Saturday –
Tacos – Always a winner in this house. I think it goes down well as the kids can pick and choose what they would like added to their tacos.
Sunday –
Chicken casserole – Something that is hearty and packed full of veggies.
I am really looking forward to this week’s meal plan. The only thing I am not sure of is the fish option on Friday as I am not a huge fish fan and have to be in the mood to eat it. So this may be moved to a pasta dish packed with veggies, I shall see how I feel later in the week on this one.
Over the last few weeks, I have started to use the slow cooker more and I am hopeful that we can use it a couple of times a week to help ease some of the post-work or busy weekends. I am still looking for some recipes that are not chilli, curries or stews to cook in the slow cooker, so if you have some please pop the links below!
