Good morning and welcome back to another meal plan.
Last week we headed back to work after a week off and the whole meal plan fell apart. I don’t know why I don’t plan better for this as I have been in school for a while now but yet again we ended up falling back into bad habits with the takeaway.
But that is behind us now and we just need to crack on with this week and get back on to the meal planning. I have gone for simple meals that we enjoy and require minimal effort from me. That way I am hoping that I start sticking to it when I get in.
I have this month however organised our Christmas dinner, we always order from Muscle Food and have never had any issues. This year though I have gone for a turkey butterfly joint rather than a whole turkey, plus we have a beef roasting joint. This way we will have chilled meat for a few days after and possibly curries or leftover stews for a few days too. What is your plans for Christmas dinner this year? We always have roast turkey with all the trimmings but as it’s Christmas we start with a prawn cocktail or cheese salad and finish with a lovely warm chocolate pudding or chocolate gateau. Anyway, that is a few weeks off, lets get back to this weeks meal plan.
Our weekly meal plan – 08/11/21
Monday –
Spaghetti bolognese – I plan to pack this full of tomatoes and mushrooms to pack it full of flavour but also bulk it out a little. There should be enough for 2 nights meals and maybe even a portion for lunch.
Tuesday –
Tuna pasta bake – This didn’t make it to the dinner table last week so we are having another attempt. The kids love this so at least I know it is an easy night all around.
Wednesday –
Beef and mushroom pie – This dish is one from the Hello Fresh box. It was delicious yet simple so I am hoping to recreate those flavours this week.
Thursday –
Pork chops and mash – We picked up some delicious pork chops from Costco the last time we went so I am going to cook this with some delicious mash.
Friday –
Fry up – I have some sausages in the freezer and eggs and mushrooms in the house this week so this will be a delicious way to end the week.
Saturday –
Crispy chilli beef – A dish from Pinch Of Nom, it looks delicious and I can’t wait to try it out.
Sunday –
Pulled pork with wedges – I switched to beef stew last weekend so we are having the pulled pork this week, it will be delicious.3
This week there is nothing fancy, just good homecooked comfort food, perfect for the chilly evenings. I just need to get back into better habits when it comes to our food again and that is only done but stopping being lazy!
